Quinoa with spinach and tofu

  • Materials
  • 500 g of cleaned spinach
  • 1 leek
  • 1 large onion
  • 1 carrot
  • 50 g chopped dill
  • 100 g of white quinoa
  • 100 g red quinoa
  • 2 teaspoons of grated ginger
  • 1 teaspoon sumac
  • 1 teaspoon tandoori
  • 1 teaspoon garlic powder
  • 1 teaspoon granulated onion
  • 2 tbsp olive oil
  • Salt Pepper
  • Lemon juice
  • For the garnish
  • 80 g of tofu

Implementation

Cut the vegetables into small pieces. Rinse the quinoa with plenty of water. Heat the olive oil in a saucepan and sauté the onion, leek and carrot. Then add the quinoa, spices, dill, spinach, salt, pepper and around 250 g of water. Simmer until the quinoa is done. Simmer until the quinoa is done. At the end, add lemon juice. Serve and garnish with the tofu.
