Potato salad with mint and ginger

Materials

  • 500 g boiled potatoes
  • 1 red pepper
  • 1 green pepper
  • 2 carrots
  • 1 cucumber
  • 1 large tomato
  • For the dressing
  • 4 tbsp olive oil
  • Lemon juice
  • 2 tbsp mustard
  • Salt Pepper
  • 4 tbsp mint leaves
  • 1/2 bunch parsley
  • 2 tbsp fresh ginger
  • For the garnish
  • 1 tbsp chia seeds
  • 1 tsp black cumin

Implementation

Cut the potatoes into large pieces and the vegetables into small cubes. Put them in a large bowl, add salt, pepper and mix.

For the dressing

We put all the ingredients together in a blender and puree them. Pour the dressing over the vegetables and mix. Transfer to a salad bowl and garnish with black cumin and chia seeds.
